- 2 red peppers, deseeded and cut into chunks
- handful black olives
- 2 tsp olive oil
- ½ x 150g pack full-fat garlic & herb soft cheese
- 4 skin-on chicken breasts
- 1 red onion, cut into wedges
- 200g pack cherry tomatoes
Heat your oven to 200C/180C fan/g as 6. And now, mix the onion and peppers on a big baking tray with half the oil. Transfer it to the oven and cook on the top shelf for 10 mins. Meanwhile, make a pocket between the flesh and the skin of each chicken breast. But don’t pull of the skin completely. Now, push equal amount of cheese under the skin, smooth the skin back down, brush with the rest of the oil, and then add to the tray along with olives and tomatoes. Return to the oven and cook it for 25-30 mins until the chicken is gold and cooked. Serve it with baked potatoes, if you want to make look more delicious.
